Happy (almost) two month anniversary to us! 

Since it’s complicated to legally get married in Mexico we opted for an intimate elopement in the mountains of Colorado back in April 😊♥️

We spent the weekend in a tiny a-frame cabin in the mountains and celebrated with pizza, Dr Pepper, nothin’ Bundt cakes and the beauty that surrounded us. I guess you can say we had our cake and ate it too 😉

Thank you to our amazing vendors who made this weekend one I’ll never forget ♥️

I’m not a fan of trains, but this did turn out to be a pleasant surprise. On this day we had every intention of being outside, but with the rain we had to adapt. 

I found the Conway Scenic Railroad and realized we could avoid the rain by going on an hour long train ride. Honestly, it worked out! Although the 1 hour scenic drive wasn’t as breathtaking as I thought it be it was still fun to enjoy the view in a warm, dry caboose. Plus, we both took a cat nap, which was nice.

Would I do it again? Probably, but I’d go on the half day train ride to see more of the scenic view I was hoping for. 

We booked coach for the Conway Excursion, which was about $20/ person.

🥾 Flume Gorge Hiking Trail 🥾 

It was raining this day so we had the whole place to ourselves. It was quite serene. We were told rain would definitely provide us with some waterfalls and they were right. 

It’s about $18/ person if you make reservations online, make sure to do so to see availability. Definitely a place to check out.

Make sure to check out this hike next time you visit Franconia, New Hampshire👇🏽 

🥾 Artist Bluff trail, a 1.5 mile loop with great panoramic views! This can take about an hour to complete with a great payout! 

🥾 The rocks were slippery after it rained so make sure you have some spikes with you. 

🥾 Make sure to go early to avoid the trails!

🍁 Sleepy Hollow Farm 🍁

This cute, picturesque farm sits 10 minutes outside of Woodstock, Vermont. When you first look at it you think you’re looking at a green screen, because of how unreal it looks! It’s like a scene out of a movie 😍 

Would you live here? I think I would, but only for the peace and quiet, and not the farm work 😆

🐄 What do you call a cow that has given birth? 🐄 

Utterly exhausted, or a new moooder, but the technical term is de-calf-inated (ba dump tss) 😂 

🍦 Some corny jokes you tend to pick up when visiting the Ben & Jerry’s headquarters in Waterbury, Vermont! 

🍦 For $6/ person you can join one of their 30-minute factory tours, and yes they do give out samples. Make sure to check online for their availability. If not, you can always check the day of and see if they have any last minute openings. 

🍦 They do have a unique flavor called Maple Syrup only for headquarters, but I stuck with a classic 😉 

🍦 Lastly, make sure you pay your respects to the dearly departed flavors at the Flavor Graveyard 😉 which is free to do! No ticket required.

The joy my inner kid felt while visiting was as the saying goes like a kid in an ice cream shop 😊 If you’re ever in Vermont, make sure and check this place out it’s so worth the trip.

From October to March, it’s said Cadillac Mountain in Acadia National Park is the first place the sunrise breaks through in the US.

Be prepared to wake up super early in the morning (bring a blanket) to welcome the sun. You’ll need to purchase a $6 reservation (1 reservation ticket per vehicle) on Recreation.gov, along with your national park fee to hit the summit. 

I’ve been wanting to do this for years now; so I was thrilled to have finally witnessed this with my favorite guy. There’s something beautiful in being up before everyone else and watching as the world lights up, literally. It’s a unique and wonderful experience I hope everyone can get to witness this too. #cadillacmountain #acadianationalpark #cadillacmountainsunrise #fallinnewengland #acadia

🥨 Disney Food Adventures 🥨 

A few weeks ago we made our way out to Disney World for a fun weekend getaway. As always I love sharing some of my favorite treats so here’s some ratings:

🥨 Night Blossom Drink: A delicious apple pear limeade with boba balls 10/10 
🥨 Caramel Apple with Tajín and Chamoy: it sounds odd, but do not not try it until you’ve taken a bite! So good, honestly, our favorite 10/10
🥨 Mickey Mouse Ice Cream Sandwich: Can’t go wrong with a classic on a hot day 8/10
🥨 Buffalo Chicken Grilled Sandwich: My favorite treat of the entire weekend 10/10
🥨 Frozen Lemonade: Nothing exciting to see here 6/10
🥨 Encato’s Tres Leches Cupcake: I was so excited to try this, but it came in short. It was good, but I’d never try it again 7/10
🥨 Wookie Cookie: This treat was just right, not too sweet, which was perfect after a day of snacking on sweets 8/10
🥨 Rum Island Breeze: Yummy on a hot day! 10/10

Do you prefer camping or glamping? ⛺️

Early summer Alex and I went glamping out in the outskirts of Austin. I love venturing off into small towns out in the middle of nowhere, more so I can see the stars at night! 

This cabin was located near Wimberley and was equipped with everything we needed to cook. It had a mini fridge, a stove, utensils, all the basic necessities to cook with. Unfortunately, we couldn’t have a fire pit 😒 due to a burn ban so no s’mores. 

Honestly, this satisfied the camping itch I had all while not having to compromise luxuries like a restroom and a bed 😅 Next time we do this it’ll be in a different place so I’m not looking at shrubs 😆

🇲🇽 I love Mexico 🇲🇽 

Growing up the only parts of Mexico I’d visit would be my grandparent’s ranch out in rural Mexico. Now that I’ve started to see other parts I can’t wait to explore the rest of the country! Here are some at the top of my list:

1. Oaxaca 
2. Guadalajara 
3. Mexico City (been once but very long ago)
4. San Miguel de Allende (have to show Alex this beauty 😍)
5. Guanajuato 
7. Michoacán

I’m sure the list will only get longer as I explore 😂
